NFPA Code 96

The National Fire Protection Association (NFPA) is an organization whose mission is "to reduce the worldwide burden of fire and other hazards..." and which is responsible for 300 codes and standards that are designed to minimize the risk and effects of fire.

The defining NFPA code for restaurant kitchen exhaust and ventilation systems is Code 96 - Standard for Ventilation Control and Fire Protection of Commercial Cooking Operations.

Code 96 - It's the law! Are you in compliance? Call Boston Power Wash before you fail inspection and incur fines or suffer damage!

Code 96 states "Upon inspection, if found to be contaminated with deposits from grease-laden vapors, the entire exhaust system shall be cleaned by properly trained, quallified, and certified company or person(s)...". The "entire exhaust system" includes the hood, filters, fan and all related ductwork.

Boston Power Wash staff are licensed with the City of Boston and the Commonwealth of Massachusetts. 

Code 96 requires that hoods, grease removal devices, ducts and other components be cleaned to bare metal at frequent intervals in accordance with the following schedule:

Systems serving solid fuel cooking operations - Monthly

Systems serving high-volume cooking operations, such as 24-hour cooking, charbroiling, or wok cooking - Quarterly

Systems serving moderate-volume cooking operations - Semiannually

Systems serving low-volume cooking operations, such as churches, day camps, seasonal businesses, or senior centers - Annually

Code 96 also provides guidelines as to installation of access panels and exhaust fans. NFPA recommends that access panels be installed every 12 feet of duct work. This insures a complete cleaning of the system. Code 96 states the all approved upblast fans be installed with hinges. Properly installed hinge kits add to the strength of the base and help to minimize metal wear over time.
